Never played a hitman game, worth playing old games or waiting for Hitman 3?

Is it worth playing the most modern two games first, or just wait and jump straight into 3? I know there's seasons and timed missions/escalations/elusive targets, are these still available or would I be missing large parts of the games by playing 1 and 2 late?

If it is worth playing them, which version of these games is best to buy? Between GOTY, GOTY legacy pack, gold edition, "the complete first season" and definitive edition I'm a little confused about which edition contains what, and which editions contain the bits you can't play anymore.

I just finished hitman 1 and 2, and now I wonder if there are any youtubers who try to play through the missions in a smooth manner also doing story missions, but not neccesarily suit only, but still silent assasin?

Not too many knockouts, etc..?
